- 1.5 lbs (680g) boneless, skinless chicken thighs
- 2 large bell peppers (approx. 400g total), cut into 1-inch strips
- 1 large yellow onion (approx. 200g), cut into wedges
- 2 tbsp (14g) fajita seasoning
- 2 tbsp (30ml) olive oil
- 1 cup (115g) shredded cheese (Cheddar or Mexican blend)
- 1/2 cup (120g) sour cream
- 2 tbsp chopped cilantro
- Lime wedges
- Brown rice or cauliflower rice for serving
Instructions
- Wash and cut bell peppers into 1-inch strips and onion into wedges. Pat chicken thighs dry and cut into 1.5-inch chunks.
- Place chicken and veggies in a large mixing bowl. Drizzle with olive oil and sprinkle with fajita seasoning.
- Toss everything until evenly coated. Let sit for 5 minutes while preheating the air fryer.
- Preheat air fryer to 400°F (200°C) for 3 minutes.
- Cook chicken in a single layer in the air fryer basket for 12-14 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C). Remove and keep warm.
- Cook seasoned peppers and onions in the air fryer for 8-10 minutes at 400°F (200°C), shaking basket every 3 minutes until tender with slight char.
- Assemble bowls with a base of rice or cauliflower rice, topped with chicken, veggies, cheese, sour cream, cilantro, and a squeeze of lime.
Notes
Pat chicken dry before cooking to ensure browning. Cook chicken and veggies in batches if your air fryer basket is small to avoid overcrowding. Reheat leftovers in the air fryer at 350°F for 3-4 minutes to restore crispiness.
