Ingredients

  • 1 lb spaghetti
  • 1 lb ground beef (80/20 blend)
  • 8 oz cream cheese (full-fat, block-style, softened)
  • 2 cups sharp cheddar cheese (shredded)
  • 4 cloves garlic (minced)
  • 1 medium yellow onion (diced)
  • 1/2 cup whole milk
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter
  • 1 tbsp oil (for tossing pasta)

Instructions

  1. Set up the grill for indirect heat at 350°F (175°C). For charcoal, pile coals to one side and place a drip pan on the other. For gas, turn on only one burner.
  2. Bring a large pot of salted water to a boil. Cook spaghetti for 1 minute less than package directions (al dente). Drain, rinse with cold water, and toss with a little oil.
  3. In a skillet over medium-high heat, brown the ground beef. Add diced onion and minced garlic in the last 2 minutes. Drain excess grease, leaving a little for flavor. Season with salt, pepper, and Italian seasoning.
  4. In a large bowl, combine softened cream cheese, shredded cheddar, milk, and half of the cooked beef mixture. Stir until smooth and creamy.
  5. In a 9×13 inch disposable aluminum pan, toss cooked spaghetti with the remaining beef mixture. Pour the cheese sauce over the top and spread evenly. Sprinkle remaining cheddar cheese on top.
  6. Place the pan on the indirect heat side of the grill. Cover and cook for 30-40 minutes until cheese is bubbly and slightly browned. Tent with foil if browning too fast.
  7. Remove from grill and let rest for 5-10 minutes before serving to allow sauce to thicken.

Notes

Do not overcook the pasta as it will continue to cook in the grill. Use block cheese and grate it yourself to ensure smooth melting. Always cook using indirect heat to prevent burning. Let the casserole rest for 5-10 minutes before serving to help the sauce set.
