  • 1 ½ cups (300g) packed brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ¼ cups (280g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • ½ cup white chocolate chips (optional)
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)
  • 1 tablespoon butter, melted (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper.
  2. Melt butter in a medium saucepan over medium heat. Stir frequently until it foams, settles, and turns deep amber with a nutty aroma (about 5-7 minutes).
  3. Immediately pour brown butter into a heatproof bowl and let cool for 5 minutes.
  4. In a large bowl, whisk the cooled brown butter, brown sugar, and granulated sugar until smooth.
  5. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  6. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  7. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix. Fold in white chocolate chips if using.
  8. Spread batter evenly into the prepared pan.
  9. Mix 2 tablespoons granulated sugar and 1 teaspoon cinnamon. Sprinkle evenly over the batter.
  10. Bake for 25-30 minutes until edges are golden and a toothpick inserted in the center comes out with moist crumbs.
  11. Cool in the pan for at least 15 minutes before lifting out and cutting into squares.

Notes

Do not burn the butter; remove from heat as soon as it smells like hazelnuts. Ensure butter cools for 5 minutes before adding eggs to prevent scrambling. Do not overmix the dough to maintain a tender texture. Bars keep well in an airtight container at room temperature for up to 5 days or frozen for up to 3 months.
