  • 1/4 cup (50g) Granulated Sugar
  • 2 tbsp (30g) Unsalted Butter, melted
  • 2 tbsp (30ml) Milk
  • 1/2 medium Apple, peeled and diced (approx. 1/2 cup)
  • 1/2 tsp Cinnamon
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 tbsp (15g) Butter (for glaze)
  • 2 tbsp (25g) Brown Sugar (for glaze)
  • 2 tbsp (30ml) Heavy Cream (for glaze)
  • 1 pinch Salt (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) or prepare microwave. Peel and dice the apple into small, uniform pieces (approx. 1/4-inch cubes). Grease a small ramekin, 4-inch pan, or 12-oz microwave-safe mug.
  2. In a small mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt until no lumps remain.
  3. Add the melted butter and milk to the dry ingredients. Stir with a fork until just combined into a thick, sticky batter. Do not overmix.
  4. Gently fold in the diced apples, ensuring they are coated in the batter to prevent sinking.
  5. Transfer batter to the prepared vessel. If baking in the oven, place on a baking sheet and bake for 10-12 minutes until a toothpick comes out clean. If using the microwave, cook on high for 1.5 to 2 minutes until set. Let cool for 2 minutes.
  6. While the cake bakes/cools, make the glaze: In a small saucepan over medium-low heat, combine the butter, brown sugar, heavy cream, and pinch of salt. Stir constantly for 2-3 minutes until the mixture bubbles and thickens to a syrupy consistency. Remove from heat.
  7. Drizzle the warm caramel glaze generously over the warm cake. Serve immediately.

Notes

This cake is best eaten fresh as the glaze can make the cake soggy if stored overnight. If storing, keep cake and glaze separate. Do not freeze. For microwave method, check at 1.5 minutes to avoid drying out. Coat apple pieces in a teaspoon of flour before folding into batter to help them suspend.
