  • 3 tbsp brown sugar
  • 2 tbsp unsalted butter, softened
  • 2 tbsp marshmallow fluff (for dough)
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 3 tbsp marshmallow fluff (for filling)
  • 1/4 tsp vanilla extract
  • 1 tsp milk

Instructions

  1. In a microwave-safe mug or bowl, stir together rolled oats, brown sugar, baking soda, and salt.
  2. Add the softened butter and 2 tablespoons of marshmallow fluff. Mix vigorously until a sticky dough forms.
  3. Shape the dough into a flat disk in the bottom of the mug.
  4. Microwave on high for 60 seconds. Check if set; if wet in the center, microwave for another 15-30 seconds. Do not overcook.
  5. Let the cookie base cool for 2 minutes to firm up.
  6. While the cookie cools, whisk together 3 tablespoons of marshmallow fluff, vanilla extract, and milk until smooth and spreadable.
  7. Split the cooled cookie base in half horizontally.
  8. Spread the filling on the bottom half and top with the other half. Press gently and serve immediately.

Notes

Do not over-microwave as oats continue to cook after removal; the center should look slightly soft. Use old-fashioned rolled oats for chewiness, not instant oats. Soften butter in the microwave for 5 seconds before mixing. Store in an airtight container at room temperature for up to 2 days, but best eaten fresh. Cookie bases can be frozen for up to 3 months.
