Description
A quick, single-serving dessert made in the microwave that costs under $0.50. These chewy brown sugar oatmeal cookies are sandwiched with a creamy marshmallow fluff filling for a comforting treat.
Ingredients
- 1/2 cup old-fashioned rolled oats
- 3 tbsp brown sugar
- 2 tbsp unsalted butter, softened
- 2 tbsp marshmallow fluff (for dough)
- 1/4 tsp baking soda
- 1/8 tsp salt
- 3 tbsp marshmallow fluff (for filling)
- 1/4 tsp vanilla extract
- 1 tsp milk
Instructions
- In a microwave-safe mug or bowl, stir together rolled oats, brown sugar, baking soda, and salt.
- Add the softened butter and 2 tablespoons of marshmallow fluff. Mix vigorously until a sticky dough forms.
- Shape the dough into a flat disk in the bottom of the mug.
- Microwave on high for 60 seconds. Check if set; if wet in the center, microwave for another 15-30 seconds. Do not overcook.
- Let the cookie base cool for 2 minutes to firm up.
- While the cookie cools, whisk together 3 tablespoons of marshmallow fluff, vanilla extract, and milk until smooth and spreadable.
- Split the cooled cookie base in half horizontally.
- Spread the filling on the bottom half and top with the other half. Press gently and serve immediately.
Notes
Do not over-microwave as oats continue to cook after removal; the center should look slightly soft. Use old-fashioned rolled oats for chewiness, not instant oats. Soften butter in the microwave for 5 seconds before mixing. Store in an airtight container at room temperature for up to 2 days, but best eaten fresh. Cookie bases can be frozen for up to 3 months.
