A creamy, savory, and deeply satisfying single-serving beef stroganoff made in a slow cooker. This budget-friendly recipe uses cheap cuts of beef and pantry staples to create a luxury-feeling meal for under $4.
Ingredients
- 8 oz beef stew meat (chuck roast cut into cubes)
- 1/2 medium yellow onion, diced
- 1/2 can (4 oz) condensed cream of mushroom soup
- 1/4 cup beef broth (low-sodium recommended)
- 1 teaspoon Worcestershire sauce
- 2 tablespoons sour cream
- 1/2 cup dry egg noodles
- 1 packet (1 oz) dry onion soup mix
- Salt and pepper to taste
Instructions
- Pat the beef stew meat dry with paper towels and toss with a pinch of salt and pepper.
- In a 1.5-quart slow cooker, combine the diced onion, beef stew meat, dry onion soup mix, beef broth, cream of mushroom soup, and Worcestershire sauce. Stir until the beef is evenly coated.
- Cover and cook on LOW for 6 to 7 hours until the beef is fork-tender. (Alternatively, cook on HIGH for 3-4 hours, though texture may vary).
- While the beef cooks, bring a small pot of salted water to a boil. Add egg noodles and cook according to package directions until al dente. Drain well.
- Once the beef is tender, turn the slow cooker to WARM. Stir in the sour cream until melted and combined.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve the creamy beef mixture over a bed of hot egg noodles.
Notes
Do not cook noodles in the slow cooker as they will become mushy; cook them separately. Add sour cream at the very end to prevent curdling. If the sauce is too thin, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir in during the last 30 minutes. For a vegetarian version, swap beef for chickpeas or tofu and use vegetable broth.
