- 3 medium bell peppers (approx. 450g), mixed red and green, sliced into 1-inch chunks
- 1 large yellow onion (approx. 200g), sliced into wedges
- 12 oz (340g) smoked sausage (kielbasa or andouille), sliced into 1/4-inch rounds
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 1 small loaf Italian bread (approx. 300g), for serving
Instructions
- Preheat oven to 400°F (200°C). Line a large half-sheet pan (18×13 inches) with foil or parchment paper.
- Wash and slice bell peppers into 1-inch chunks. Slice yellow onion into wedges.
- Slice smoked sausage into 1/4-inch rounds.
- Place peppers, onions, and sausage on the prepared sheet pan. Drizzle with olive oil.
- Sprinkle with oregano, garlic powder, red pepper flakes, salt, and pepper. Toss with tongs to coat everything evenly.
- Roast in the oven for 20 minutes. Remove pan and shake or stir the ingredients to ensure even browning.
- Return to oven and roast for another 5-10 minutes, until peppers are tender and slightly charred, and sausage is crispy.
- Taste and adjust seasoning if needed. Serve immediately with warm Italian bread.
Notes
Do not crowd the pan; spread ingredients in a single layer to prevent steaming. If using fresh garlic, add it in the last 2 minutes to avoid burning. For a gluten-free option, serve over rice or cauliflower rice instead of bread. Leftovers improve in flavor after 24 hours.
