Description

A comforting, spicy, and creamy dinner featuring roasted sweet potatoes stuffed with shredded chicken in a buffalo-blue cheese sauce. Perfect for a gentle self-care meal after a long day.


Ingredients

  • 4 medium sweet potatoes (Jewel or Garnet variety, approx. 1.5 lbs / 700g)
  • 2 large boneless, skinless chicken breasts (approx. 1.5 lbs / 700g)
  • 1/2 cup (120ml) Frank’s RedHot Original buffalo sauce
  • 2 tbsp unsalted butter, divided
  • 1/4 cup (60ml) blue cheese dressing
  • 3 stalks green onions, chopped
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and prick them 4-5 times with a fork to allow steam to escape.
  2. Place sweet potatoes directly on the oven rack or on a lined baking sheet. Roast for 45-50 minutes until soft to the touch and caramelized at the ends. Let cool for 10 minutes.
  3. While potatoes roast, heat 1 tablespoon of butter in an oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper.
  4. Sear chicken for 3-4 minutes per side until golden brown. Pour in buffalo sauce, then transfer skillet to the oven.
  5. Bake chicken for 10-12 minutes until internal temperature reaches 165°F (74°C). Remove and let rest for 5 minutes.
  6. Shred the cooked chicken using two forks. In a bowl, mix shredded chicken with remaining 1 tablespoon of melted butter and blue cheese dressing.
  7. Slice roasted sweet potatoes lengthwise, leaving the bottom intact. Scoop out some center flesh to create a well.
  8. Spoon the chicken mixture generously into each potato boat.
  9. Return to oven and broil on high for 3-5 minutes until cheese is melted and edges are bubbly.
  10. Garnish with chopped green onions and serve immediately.

Notes

Do not skip searing the chicken for better flavor. If potatoes burst, it is because they were not pricked before roasting. The scooped-out potato flesh can be mashed with butter and eaten as a side. This recipe does not freeze well due to texture changes in the sweet potato; freeze the chicken mixture separately if meal prepping.
