- 1 cup uncooked white rice
- 1.5 cups shredded rotisserie chicken (or canned chicken)
- 1.5 cups frozen broccoli florets
- 1 can (10.5 oz) condensed cream of chicken soup
- 0.5 cup milk
- 1 cup shredded cheddar cheese, divided
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a large mixing bowl, combine uncooked white rice, condensed cream of chicken soup, and milk. Stir vigorously until smooth.
- Add shredded chicken, chopped frozen broccoli, garlic powder, onion powder, and half of the shredded cheddar cheese to the bowl. Stir until rice is fully coated in the sauce.
- Pour mixture into the prepared baking dish and smooth the top.
- Bake for 35 minutes, or until rice is tender.
- Remove from oven, sprinkle remaining cheese on top, and bake for an additional 5 minutes until cheese is melted and bubbly.
- Let rest for 5-10 minutes before serving.
Notes
Do not rinse the rice to allow starch to thicken the sauce. Use frozen broccoli directly from the bag to prevent a watery casserole. Let the casserole rest for 5-10 minutes after baking to allow it to set. For a crispy top, broil for the last 1-2 minutes.
