- 1 cup (225g) unsalted butter, room temperature
- 1 cup (200g) granulated sugar
- 1 cup (200g) packed light brown sugar
- 2 large eggs, room temperature
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups (340g) semi-sweet chocolate chips
- 1 cup (150g) toffee bits
- Sea salt flakes, optional for topping
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar on medium-high speed until light, fluffy, and pale (about 3 minutes). Scrape down the sides of the bowl.
- Add eggs one at a time, beating well after each addition.
- Add flour, baking soda, and salt. Mix on low speed or stir with a wooden spoon just until the flour disappears. Do not overmix.
- Fold in chocolate chips and toffee bits until evenly distributed. Optionally, press extra bits onto the top of the dough balls before baking.
- Scoop rounded balls of dough onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 15-18 minutes until edges are golden brown but centers still look slightly soft.
- Let cookies cool on the baking sheet for 5 minutes. Sprinkle with sea salt flakes if desired, then transfer to a wire rack to cool completely.
Notes
Do not overbake; cookies will firm up as they cool. For thicker cookies, chill the dough for 30 minutes before baking. Store in an airtight container with a slice of bread to maintain softness. Can be frozen for up to 3 months.
