A simple, hydrating lemon mint detox drink made with chia seeds that helps jumpstart metabolism and keeps you feeling full without complicated prep.

- 2 tablespoons chia seeds
- 16 oz (1 cup) water (room temperature or cool)
- 1 medium fresh lemon
- 1 small bunch fresh mint leaves (about 10–12 leaves)
- Ice cubes (optional)
- 1 teaspoon apple cider vinegar (optional)
- Pinch of sea salt (optional)
- 1 teaspoon raw honey or maple syrup (optional)
Instructions
- Wash mint leaves thoroughly and cut the lemon in half.
- Pour 1 cup of water into a glass jar or pitcher.
- Add 2 tablespoons of chia seeds and stir well to prevent clumping.
- Let the mixture sit for at least 5 minutes, ideally 15-20 minutes, until the seeds form a gel.
- Squeeze the juice of half a lemon into the jar and add the mint leaves.
- Gently muddle or stir the mint to release its oils.
- Add ice cubes if desired, stir one last time, and serve.
Notes
Stir chia seeds immediately after adding to water to prevent clumping. Use room temperature water for faster gel formation. Do not freeze as it ruins the texture. For meal prep, keep lemon and mint separate until serving to prevent bitterness.
