Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper if desired.
- In a small bowl, combine ¼ cup brown sugar, ¼ cup flour, ½ teaspoon cinnamon, and 2 tablespoons cold cubed butter. Use a fork to mix until the mixture resembles coarse crumbs. Set aside.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the melted butter, granulated sugar, brown sugar, egg, and vanilla extract to the mashed bananas. Whisk until well combined and glossy.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Pour the dry ingredients into the wet ingredients. Gently fold together with a spatula until just combined. Do not overmix.
- If using, fold in the chopped nuts.
- Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the cinnamon streusel crumbles evenly over the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Tent with foil if the top browns too quickly.
- Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
Notes
Ensure bananas are very ripe (black spots) for maximum sweetness and moisture. Do not overmix the batter to avoid a dense texture. Cool completely before slicing to prevent gumminess. Can be stored at room temperature for 3-4 days or frozen for up to 3 months.
