Ingredients

  • 4 green tea bags (mild jasmine or premium green tea)
  • 2 cups water (filtered)
  • 1 cup dragon fruit puree OR 3-4 tbsp dragon fruit powder
  • 1 cup white grape juice
  • 2 tablespoons fresh lemon juice
  • 12 tablespoons honey or agave nectar (optional)
  • Ice cubes
  • Freeze-dried dragon fruit chunks (optional, for garnish)

Instructions

  1. Boil 2 cups of water, remove from heat, and steep green tea bags for 3-5 minutes. Remove bags and let tea cool to room temperature, then chill completely in the fridge.
  2. Prepare the dragon fruit: If using frozen puree, let it thaw slightly. If using fresh fruit, blend until smooth. If using powder, mix with a little warm water to form a paste. Aim for 1 cup of puree.
  3. In a large pitcher, combine the chilled green tea, dragon fruit puree, and white grape juice. Stir well until the mixture turns vibrant pink.
  4. Taste the mixture. If it is too tart, add honey or agave nectar and stir until dissolved.
  5. Add fresh lemon juice (start with 2 tablespoons) and stir. Adjust sweetness or tartness to taste.
  6. Fill glasses with ice cubes. Pour the refresher over the ice.
  7. Garnish with freeze-dried dragon fruit chunks if desired. Serve immediately.

Notes

For the best color, use pink-fleshed dragon fruit. To prevent dilution, freeze some dragon fruit puree into ice cubes. The drink can be stored in the fridge for up to 2 days. For a fizzy version, replace half the grape juice with sparkling water. For a spiked version, add 1-2 oz of vodka or white rum per serving.
