Description
A simple, creamy, and tropical coconut drink that mimics the viral Swig soda. Made with just three main ingredients, this gluten-free treat is ready in 5 minutes and offers a lighter, fresher alternative to heavy theme park beverages.
Ingredients
- 1 can (13.5 oz / 400ml) full-fat coconut milk
- 1/2 cup (120ml) sweetened condensed milk
- 2 to 3 cups (300-450g) ice
- 1 teaspoon vanilla extract (optional)
- 2 tablespoons white chocolate chips (optional)
- Toasted coconut flakes or lime wheel for garnish (optional)
Instructions
- Chill the coconut milk and sweetened condensed milk in the refrigerator for at least 30 minutes if possible.
- Shake the can of full-fat coconut milk vigorously to ensure the cream and water are fully incorporated.
- Pour the entire can of coconut milk into a blender.
- Add the sweetened condensed milk, vanilla extract, and white chocolate chips (if using) to the blender.
- Add 2 cups of ice cubes to the blender.
- Blend on low speed, gradually increasing to high, for 30-45 seconds until the mixture is smooth, frothy, and uniform with no visible ice chunks.
- Taste and adjust sweetness or thickness by adding lime juice, salt, more condensed milk, or water as needed.
- Pour immediately into tall glasses and garnish with toasted coconut flakes or a lime wheel.
- Serve immediately for the best texture.
Notes
Shake the coconut milk can well before opening to prevent separation. Use full-fat coconut milk for the best creamy texture. If the drink is too thick, add a splash of water; if too thin, add more ice. This drink is best served fresh as it separates and melts quickly.
