Description
A simple, no-bake healthy snack made by stuffing Medjool dates with creamy almond butter and finishing with a sprinkle of flaky sea salt. Ready in just 5 minutes.

- 1 package Medjool dates (about 12–16 large, soft dates)
- 1/2 cup creamy almond butter
- Flaky sea salt (for sprinkling)
- Optional: 2 tablespoons dark chocolate chips
- Optional: 2 tablespoons chopped pistachios
- Optional: 2 tablespoons mini chocolate chips
Instructions
- Rinse the dates under cool water and pat them completely dry with a paper towel. Check for and remove any pits.
- Hold a date firmly in one hand. Use a paring knife to make a long slit down the length of the date, from top to bottom, without cutting all the way through to create a pocket.
- Take about 1/2 to 1 teaspoon of almond butter and press it into the slit using the back of a spoon or your finger. Fill generously.
- If using optional toppings like pistachios or mini chocolate chips, gently press them onto the top of the almond butter.
- Sprinkle flaky sea salt over each stuffed date to balance the sweetness.
- Serve immediately or store in the refrigerator to firm up the almond butter.
Notes
Ensure dates are soft; if stiff, soak in warm water for 10 minutes and pat dry. If almond butter is too thick, microwave for 10 seconds to soften. Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
