- 2 large boneless, skinless chicken breasts (approx. 600g / 1.3 lbs)
- 4 tbsp unsalted butter (divided)
- 1/2 cup heavy cream
- 1/2 cup fresh lemon juice (from approx. 2–3 lemons)
- 2 tbsp capers, drained
- 3 cloves garlic, minced
- 1/2 cup all-purpose flour (for dredging)
- Salt and black pepper to taste
Instructions
- Pat chicken breasts dry and pound them to 1/2-inch thickness for even cooking. Season generously with salt and pepper, then dredge in flour, shaking off excess.
- Heat 2 tablespoons of butter in a large skillet over medium-high heat until foaming. Sear chicken for 4-5 minutes per side until golden brown and internal temperature reaches 165°F. Remove chicken to a plate and tent with foil.
- Reduce heat to medium. Add remaining 2 tablespoons of butter. Once melted, add minced garlic and sauté for 30 seconds until fragrant, being careful not to burn.
- Pour in fresh lemon juice to deglaze the pan, scraping up brown bits. Simmer for 1-2 minutes to reduce slightly.
- Whisk in heavy cream and capers. Simmer gently until the sauce thickens. Taste and adjust seasoning if needed.
- Return chicken to the pan, nestling it into the sauce. Warm through for 1 minute. Serve immediately.
Notes
Do not overcrowd the pan when searing chicken. Ensure cream and lemon juice are at room temperature to prevent curdling. This dish does not freeze well due to the cream sauce. Serve with steamed asparagus, roasted potatoes, or pasta.
