Instructions

  1. Drain the pumpkin puree: Pour the puree into a fine-mesh sieve or colander lined with a paper towel and let it sit for 10-15 minutes to remove excess liquid. Press gently to help drain, then measure out 1 cup.
  2. Mix the pumpkin base: In a medium bowl, combine the softened cream cheese, drained pumpkin puree, confectioners’ sugar, vanilla extract, cinnamon, nutmeg, ginger, cloves, and salt. Beat with an electric mixer on medium speed until smooth and creamy. Scrape down the sides of the bowl.
  3. Whip the cream: In a large, cold bowl, pour the heavy whipping cream. Whip on high speed until stiff peaks form (about 2-3 minutes). Be careful not to over-whip.
  4. Fold the mixture: Add one-third of the whipped cream to the pumpkin mixture and gently fold in with a spatula to lighten the base. Add the remaining cream and gently fold until just combined and no white streaks remain. Do not overmix.
  5. Chill: Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight, to allow the mousse to set and flavors to meld.
  6. Serve: Spoon the mousse into serving glasses or jars. Top with whipped cream, graham cracker crumbs, candied nuts, or a sprinkle of cinnamon. Serve chilled.

Notes
