Description
A kid-friendly, one-pan creamy spinach artichoke chicken skillet that is easy to make with children. This forgiving recipe features juicy chicken cubes in a rich, velvety sauce with artichokes and spinach.

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 4 cloves garlic, minced
- 1 can (14 oz) marinated artichoke hearts, drained (reserve 1 tbsp marinade)
- 10 oz frozen spinach, thawed and squeezed dry
- 1 cup heavy cream
- 8 oz full-fat cream cheese, softened and cubed
- 1 cup shredded low-moisture mozzarella cheese
- 1 tbsp Italian seasoning
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp salt
- 0.5 tsp black pepper
Instructions
- Pat chicken cubes dry and season with salt and pepper. Toss to coat.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken in a single layer for 3-4 minutes until golden, then flip and cook for another 2-3 minutes until done. Remove chicken to a plate.
- Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook for 1 minute until fragrant.
- Stir in artichoke hearts, squeezed spinach, heavy cream, and cream cheese. Cook over medium-low heat, stirring gently, until cream cheese is melted and sauce is smooth.
- Stir in Italian seasoning and taste for seasoning adjustments.
- Return chicken to the skillet and stir to coat in sauce.
- Sprinkle mozzarella cheese over the top. Cover and simmer for 3-4 minutes until cheese is melted and bubbly. Serve immediately.
Notes
Ensure spinach is thoroughly squeezed dry to prevent a watery sauce. Keep heat low when adding dairy to prevent separation. This dish is best served fresh as it does not freeze well due to the dairy content. Can be served over pasta, rice, or with crusty bread.
