Ingredients
- 2 medium eggplants (about 1.5 lbs / 680g)
- 2 tbsp Kosher Salt
- 1 tsp Black Pepper
- 1 cup All-Purpose Flour
- 3 large Eggs
- 2 tbsp Milk
- 1.5 cups Panko Breadcrumbs
- 0.5 cup Parmesan Cheese, freshly grated
- 1 tsp Dried Oregano
- 1 tsp Garlic Powder
- 2 cups Marinara Sauce
- 2 cups Mozzarella Cheese, shredded (low-moisture)
- Fresh Basil Leaves, for garnish
- Olive Oil, for brushing
Instructions
- Wash eggplants, trim stems, and slice into 1/4-inch thick rounds. If rounds are large, cut in half.
- Place slices in a single layer on paper towels and sprinkle generously with kosher salt. Let sit for 15 minutes to draw out moisture.
- Pat eggplant slices dry with fresh paper towels.
- Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
- Set up three shallow bowls: Bowl 1 with flour and a pinch of salt/pepper; Bowl 2 with eggs whisked with milk; Bowl 3 with panko, grated Parmesan, oregano, and garlic powder.
- Dredge each eggplant slice in flour, shaking off excess. Dip into egg wash, then press firmly into breadcrumb mixture on both sides.
- Place a breaded slice on a baking sheet. Spread 1 tablespoon marinara sauce on top, sprinkle with mozzarella, and add another breaded slice. Repeat for 2-3 layers.
- Brush the top of each stack with a little olive oil.
- Bake for 15 minutes. Check for bubbling and golden cheese. If needed, bake for another 5-10 minutes.
- Let stacks cool for 5 minutes before serving to allow them to firm up.
Notes
Salting and drying the eggplant is crucial to prevent sogginess. Use low-moisture mozzarella for better melting and structure. Do not crowd the baking sheets to ensure air circulation and crispiness. If the cheese browns too quickly, cover loosely with foil for the last few minutes. These can be assembled up to 4 hours ahead and refrigerated before baking.
