- 2 pounds boneless, skinless chicken breasts, cut into 1-inch thick strips
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt

- 2 large eggs
- Splash of milk
- 2 cups panko breadcrumbs
- Pinch of salt and pepper for breadcrumbs
- 0.5 cup whole grain mustard
- 0.5 cup honey
- 0.25 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon hot sauce
- 2 tablespoons avocado oil or vegetable oil
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and place a wire rack on top.
- Dry chicken strips with paper towels and slice into uniform 1-inch strips.
- Set up a dredging station with three shallow bowls: one with flour mixed with garlic powder, smoked paprika, salt, and pepper; one with whisked eggs and milk; and one with panko breadcrumbs mixed with salt and pepper.
- Dredge each chicken strip in the flour mixture, shaking off excess. Dip into the egg wash, letting excess drip off, then press firmly into the panko breadcrumbs to coat evenly.
- Arrange breaded chicken strips on the wire rack, ensuring they are not touching. Brush tops lightly with avocado oil.
- Bake for 15-18 minutes, flipping halfway through, until golden brown and internal temperature reaches 165°F (74°C).
- While chicken bakes, whisk together whole grain mustard, honey, mayonnaise, lemon juice, and hot sauce in a small bowl to make the glaze.
- Remove chicken from oven, brush generously with the honey mustard glaze, and return to oven for 2-3 minutes to set the glaze.
- Let rest for 2 minutes before serving with extra glaze on the side.
Notes
Do not crowd the pan to ensure crispiness. Press breadcrumbs firmly onto chicken to prevent falling off. Glaze only at the end to prevent burning. For leftovers, reheat in an air fryer or oven to maintain crunch; avoid the microwave.
