Dairy-Free Coconut Lime Rice Pudding

  • Author: Lara
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

A creamy, tangy, and comforting one-pot dessert made with jasmine rice and full-fat coconut milk. Naturally gluten-free and vegan, this quick 30-minute recipe is perfect for busy weeknights.

Ingredients

Scale
  • 1 cup jasmine rice (rinsed)
  • 2 cans (400ml each) full-fat coconut milk
  • 1 cup coconut water (or water)
  • 1 lime (zest and juice)
  • 34 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Rinse the jasmine rice in a fine-mesh strainer under cold water until the water runs clear to remove excess starch.
  2. In a medium heavy-bottomed saucepan, combine the rinsed rice, full-fat coconut milk, coconut water, and salt.
  3. Place the pot over medium-high heat and bring to a boil, then reduce heat to low.
  4. Cover partially with a lid, leaving a small gap for steam to escape, and simmer gently for about 20 minutes, stirring every 5 minutes to prevent sticking.
  5. Check the texture; the rice should be tender and the mixture thickening. If too thick, add a splash of water; if too thin, simmer uncovered for 5-10 minutes more.
  6. Remove from heat and stir in the maple syrup, vanilla extract, and lime zest.
  7. Taste and adjust sweetness or acidity as needed, then stir in the fresh lime juice last.
  8. Let the pudding sit for 10 minutes to thicken further before serving warm or refrigerating to serve cold.

Notes

Use full-fat canned coconut milk for the best texture; carton coconut milk will result in a watery pudding. The pudding thickens as it cools, so do not overcook it until solid. It keeps well in the fridge for up to 5 days. Do not freeze as the texture may become grainy. For a nuttier flavor, toast the rinsed rice in the dry pot for 2 minutes before adding liquids.
