Description
A creamy, tangy, and comforting one-pot dessert made with jasmine rice and full-fat coconut milk. Naturally gluten-free and vegan, this quick 30-minute recipe is perfect for busy weeknights.
Ingredients
- 1 cup jasmine rice (rinsed)
- 2 cans (400ml each) full-fat coconut milk
- 1 cup coconut water (or water)
- 1 lime (zest and juice)
- 3–4 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Rinse the jasmine rice in a fine-mesh strainer under cold water until the water runs clear to remove excess starch.
- In a medium heavy-bottomed saucepan, combine the rinsed rice, full-fat coconut milk, coconut water, and salt.
- Place the pot over medium-high heat and bring to a boil, then reduce heat to low.
- Cover partially with a lid, leaving a small gap for steam to escape, and simmer gently for about 20 minutes, stirring every 5 minutes to prevent sticking.
- Check the texture; the rice should be tender and the mixture thickening. If too thick, add a splash of water; if too thin, simmer uncovered for 5-10 minutes more.
- Remove from heat and stir in the maple syrup, vanilla extract, and lime zest.
- Taste and adjust sweetness or acidity as needed, then stir in the fresh lime juice last.
- Let the pudding sit for 10 minutes to thicken further before serving warm or refrigerating to serve cold.
Notes
Use full-fat canned coconut milk for the best texture; carton coconut milk will result in a watery pudding. The pudding thickens as it cools, so do not overcook it until solid. It keeps well in the fridge for up to 5 days. Do not freeze as the texture may become grainy. For a nuttier flavor, toast the rinsed rice in the dry pot for 2 minutes before adding liquids.
