  • 1/2 tsp garlic powder (1g)
  • 1/4 cup grated Parmesan cheese (25g)
  • 1 tbsp butter or olive oil (14g butter / 15ml oil)
  • 1/2 cup marinara sauce (120g)
  • 1/2 cup shredded low-moisture mozzarella cheese (50g)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a small baking dish with parchment paper or grease lightly.
  2. Place chicken breast between plastic wrap or in a ziplock bag and pound to an even 1/4-inch thickness. Season both sides with salt and pepper.
  3. Set up three shallow bowls: one with flour, one with whisked egg, and one with panko mixed with Parmesan, Italian seasoning, and garlic powder.
  4. Dredge chicken in flour, dip in egg wash, then press firmly into the breadcrumb mixture to coat evenly.
  5. Place coated chicken in the baking dish. Brush the top with melted butter or olive oil.
  6. Bake for 10 minutes until the breading is golden brown and chicken is starting to cook through.
  7. Remove from oven. Spoon marinara sauce over the chicken, leaving a border around the edges.
  8. Sprinkle shredded mozzarella evenly over the sauce.
