- 2 lbs (900g) boneless, skinless chicken breasts
- 1.5 cups (360ml) BBQ sauce
- 8–10 soft burger buns (brioche or potato)
- 2 tbsp (30g) unsalted butter
- 1 tsp salt
- 1 bay leaf (optional)
- 2 cups coleslaw mix (optional)
- 2 tbsp mayo (optional)
- Splash of vinegar (optional)
Instructions
- Place chicken breasts in a large pot and cover with cold water by an inch. Add salt and bay leaf if using.
- Bring water to a boil, then reduce heat to medium-low. Simmer covered for 12-15 minutes until internal temperature reaches 165°F (74°C).
- Remove chicken from water and let rest for 5 minutes.
- Shred the chicken using two forks or a hand mixer on low speed.
- Return shredded chicken to the pot and pour in BBQ sauce. Stir to coat.
- Simmer the chicken and sauce on low heat for 5 minutes to allow flavors to meld.
- Melt butter in a large skillet over medium heat. Toast buns cut-side down for 1-2 minutes until golden brown.
- Assemble sandwiches by spooning warm BBQ chicken onto toasted bun bottoms. Add coleslaw if desired.
- Serve immediately.
Notes
Chicken can be cooked and mixed with sauce up to 24 hours in advance. Toasting buns is essential to prevent sogginess. Leftovers can be frozen for up to 3 months. For a spicy kick, add cayenne or jalapeño. For a smoky flavor, add bourbon to the sauce.
