Easy Mississippi Pot Roast: Best 8-Hour Crockpot Recipe

Description

A simple, fork-tender slow cooker chuck roast made with ranch dressing mix, onion soup mix, pepperoncini peppers, and butter. This set-it-and-forget-it meal is perfect for busy weeknights and yields rich, savory flavors with minimal cleanup.


Ingredients

  • 34 lbs chuck roast
  • 1 packet (1 oz / 28g) dry ranch dressing mix
  • 1 packet (1 oz / 28g) dry onion soup mix
  • 1 jar (about 1012 peppers / 150g drained) pepperoncini peppers
  • 23 tablespoons pepperoncini juice
  • 1 stick (113g) butter
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1.5 lbs (680g) red potatoes, cut into halves or quarters
  • 2 large carrots (200g), cut into large chunks (optional)

Instructions

  1. Pat the chuck roast dry with paper towels. Trim any large pieces of hard fat if desired.
  2. Sprinkle the entire packet of ranch dressing mix over the roast.
  3. Sprinkle the entire packet of dry onion soup mix on top of the roast.
  4. Pour the Worcestershire sauce over the roast.
  5. Place the stick of butter on top of the meat.
  6. Add the pepperoncini peppers and pour in 2-3 tablespoons of pepperoncini juice.
  7. Place the red potatoes and carrots in the bottom of the slow cooker, then add the roast on top (or nestle veggies around the roast).
  8. Cover and cook on Low for 8 hours, or until the meat pulls apart easily with a fork and internal temperature reaches 195-205°F.
  9. Remove the roast and shred it using two forks.
  10. Return the shredded meat to the pot with the sauce and vegetables, stirring gently to coat.
  11. Taste the sauce and add salt and pepper if needed, then serve immediately.

Notes

Do not cook on High if you want the most tender meat; Low and slow is key. Do not lift the lid frequently during cooking. The sauce is liquid gold, so do not drain it. For a thicker sauce, mix 1 teaspoon of cornstarch with water and stir in during the last 30 minutes. Leftovers taste even better the next day.
