A cozy, make-ahead autumn dessert featuring layers of spiced apples, pound cake, whipped cream cheese frosting, and caramel sauce. It is visually stunning, forgiving to make, and tastes better the next day.
Ingredients
- 1 loaf (12-16 oz) pound cake or angel food cake, cut into 1-inch cubes
- 3 medium apples (mix of tart like Granny Smith and sweet like Honeycrisp), peeled, cored, and diced
- 4 tablespoons butter, divided
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract, divided
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- 2 cups heavy cream, cold
- 4 oz cream cheese, softened
- ½ cup powdered sugar
- 1 cup caramel sauce
- ½ cup pecans or walnuts, chopped and toasted
Instructions
- Peel, core, and dice apples into small cubes. In a large skillet, melt 2 tablespoons butter over medium heat. Add apples, lemon juice, and ½ teaspoon vanilla. Sauté for 5-7 minutes until tender but holding shape. Remove from heat and let cool completely.
- Cut pound cake into 1-inch cubes. If fresh, toast lightly at 350°F for 5-7 minutes to dry out slightly. Toss cake cubes with a mixture of sugar and cinnamon (or brush with melted butter and sprinkle sugar).
- In a large bowl, combine cold heavy cream, softened cream cheese, powdered sugar, and remaining ½ teaspoon vanilla. Beat on medium-high speed until stiff peaks form. Keep refrigerated until assembly.
- In a large glass trifle bowl, start with a layer of cake cubes. Drizzle with some caramel sauce. Add a layer of sautéed apples, followed by a generous layer of whipped cream. Repeat layers until ingredients are used, finishing with cream on top.
- Cover and refrigerate for at least 2 hours, ideally overnight, to allow flavors to meld and cake to soften.
- Before serving, drizzle remaining caramel sauce over the top. Sprinkle with toasted nuts. Dust with cinnamon or add extra whipped cream if desired.
Notes
Slightly stale cake works best as it absorbs flavors without turning to mush immediately. Ensure apples are completely cool before adding to the trifle to prevent the cream from melting. The dessert improves in flavor after sitting in the refrigerator overnight. Do not freeze, as the cream will separate and the cake texture will suffer.
