Description
A creamy, frozen tropical cocktail made with just three main ingredients: frozen pineapple, coconut cream, and sweetener. It offers a thick, milkshake-like texture without diluting ice and can be served as a mocktail or spiked with rum.
Ingredients
- 2 cups (300g) frozen pineapple chunks
- 1 can (400ml) full-fat coconut cream or coconut milk
- 2–3 tablespoons (30-45ml) simple syrup, honey, or agave nectar
- 2–3 oz (60-90ml) white rum (optional)
- 1 teaspoon lime juice (optional)
- 4–5 mint leaves for garnish
Instructions
- If using fresh pineapple, cut into 1-inch chunks and freeze for at least 4 hours or overnight.
- Add frozen pineapple chunks, coconut cream, and sweetener to a high-speed blender.
- Add optional ingredients like rum or lime juice if desired.
- Blend on low speed initially, then increase to high. Blend for 30-60 seconds until thick, creamy, and smooth.
- If the mixture is too thick, add a splash of water or coconut milk. If too thin, add more frozen pineapple.
- Taste and adjust sweetness or tartness as needed.
- Pour into tall glasses (highball or hurricane glasses).
- Garnish with a pineapple wedge and mint sprig. Serve immediately.
Notes
Use frozen pineapple chunks instead of ice to prevent dilution and maintain a thick texture. Coconut cream provides a richer consistency than coconut milk. This drink is best served immediately as it melts quickly. If storing, freeze in an airtight container for up to 24 hours and re-blend before serving.
