A creamy, frozen tropical cocktail made with just three main ingredients: frozen pineapple, coconut cream, and sweetener. It offers a thick, milkshake-like texture without diluting ice and can be served as a mocktail or spiked with rum.

  • 1 can (400ml) full-fat coconut cream or coconut milk
  • 23 tablespoons (30-45ml) simple syrup, honey, or agave nectar
  • 23 oz (60-90ml) white rum (optional)
  • 1 teaspoon lime juice (optional)
  • 45 mint leaves for garnish

Instructions

  1. If using fresh pineapple, cut into 1-inch chunks and freeze for at least 4 hours or overnight.
  2. Add frozen pineapple chunks, coconut cream, and sweetener to a high-speed blender.
  3. Add optional ingredients like rum or lime juice if desired.
  4. Blend on low speed initially, then increase to high. Blend for 30-60 seconds until thick, creamy, and smooth.
  5. If the mixture is too thick, add a splash of water or coconut milk. If too thin, add more frozen pineapple.
  6. Taste and adjust sweetness or tartness as needed.
  7. Pour into tall glasses (highball or hurricane glasses).
  8. Garnish with a pineapple wedge and mint sprig. Serve immediately.

Notes

Use frozen pineapple chunks instead of ice to prevent dilution and maintain a thick texture. Coconut cream provides a richer consistency than coconut milk. This drink is best served immediately as it melts quickly. If storing, freeze in an airtight container for up to 24 hours and re-blend before serving.
