  • 1 tbsp honey
  • 12 Hawaiian sweet rolls, halved horizontally
  • 1 cup shredded cheddar cheese
  • 1/4 cup ranch dressing (for serving)
  • 4 celery stalks, cut into batons
  • 1/4 cup blue cheese dressing (optional, for serving)

Instructions

  1. Place chicken breasts in a medium saucepan. Add chicken stock and garlic powder. Bring to a boil over medium-high heat, then reduce to a simmer.
  2. Cover and cook for 12-15 minutes until chicken reaches an internal temperature of 165°F (74°C).
  3. Remove chicken from stock and let cool for 5 minutes. Shred chicken into small pieces using two forks.
  4. In a medium bowl, whisk together hot sauce, melted butter, and honey until smooth.
  5. Add shredded chicken to the buffalo sauce bowl and toss gently until evenly coated. Let sit for a minute to marinate.
  6. Preheat oven to 350°F (175°C). Line a 13×9 inch baking sheet with parchment paper.
  7. Place the bottom halves of the Hawaiian rolls on the baking sheet.
  8. Spoon the buffalo chicken mixture evenly over the buns.
  9. Sprinkle shredded cheddar cheese over the chicken, covering it completely.
  10. Bake for 8-10 minutes until cheese is melted and bubbly and bun edges are golden brown.
  11. Remove from oven and let cool for 2 minutes. Serve with ranch or blue cheese dressing and celery sticks.
