Description
Smoked sugar cookies infused with hickory flavor and topped with char-roasted chocolate royal icing, designed for game day celebrations.
Ingredients
Scale
- 1 cup (226g) unsalted butter, softened to room temperature
- 1 ½ cups (300g) granulated sugar
- 2 large egg yolks
- 2 tsp vanilla extract
- 3 ½ cups (440g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp fine sea salt
- 4 oz (113g) bittersweet chocolate chunks (60-70%)
- 2 tbsp heavy cream
- 2 cups (240g) confectioners’ sugar, sifted
- Hickory or apple wood chips, soaked for 30 minutes
Instructions
- Cream softened butter and granulated sugar together until pale and fluffy (3-4 minutes with mixer).
- Add egg yolks one at a time, followed by vanilla extract, mixing until combined.
- Whisk together flour, baking powder, baking soda, and salt in a separate bowl.
- Gradually add dry ingredients to wet mixture on low speed until just combined. Do not overmix.
- Divide dough into two disks, wrap in plastic, and chill in refrigerator for at least 2 hours.
- Set up grill for indirect heat at 225°F (107°C). Pile lit charcoal on one side and place a drip pan on the other.
- Place soaked wood chips on coals to generate thin blue smoke.
- Roll chilled dough to ¼ inch thickness and cut into football shapes using a cookie cutter.
- Place cookies on a parchment-lined baking sheet on the indirect heat side of the grill.
- Smoke cookies for 20-25 minutes until edges start to set.
- Preheat oven to 350°F (175°C). Transfer smoking-hot baking sheet to oven.
- Bake for 10-12 minutes until edges are set but centers are slightly soft.
- Cool cookies on the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Melt bittersweet chocolate chunks over indirect heat or a double boiler, allowing them to absorb some smoke.
- Whip heavy cream until soft peaks form, then fold in melted chocolate.
- Fold in sifted confectioners’ sugar and whip until stiff peaks form.
- Spread icing onto cooled cookies and pipe laces using a toothpick or piping bag.
- Let icing set for at least 1 hour before serving.
Notes
Keep the dough cold to prevent spreading. Control smoke levels to avoid bitterness; aim for thin blue smoke. Sift powdered sugar twice for smooth icing. Cookies can be made ahead and frozen un-iced for up to 3 months.
