Description

Ingredients

  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 ½ cups (300g) granulated sugar
  • 2 large egg yolks
  • 2 tsp vanilla extract
  • 3 ½ cups (440g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp fine sea salt
  • 4 oz (113g) bittersweet chocolate chunks (60-70%)
  • 2 tbsp heavy cream
  • 2 cups (240g) confectioners’ sugar, sifted
  • Hickory or apple wood chips, soaked for 30 minutes

Instructions

  1. Cream softened butter and granulated sugar together until pale and fluffy (3-4 minutes with mixer).
  2. Add egg yolks one at a time, followed by vanilla extract, mixing until combined.
  3. Whisk together flour, baking powder, baking soda, and salt in a separate bowl.
  4. Gradually add dry ingredients to wet mixture on low speed until just combined. Do not overmix.
  5. Divide dough into two disks, wrap in plastic, and chill in refrigerator for at least 2 hours.
  6. Set up grill for indirect heat at 225°F (107°C). Pile lit charcoal on one side and place a drip pan on the other.
  7. Place soaked wood chips on coals to generate thin blue smoke.
  8. Roll chilled dough to ¼ inch thickness and cut into football shapes using a cookie cutter.
  9. Place cookies on a parchment-lined baking sheet on the indirect heat side of the grill.
  10. Smoke cookies for 20-25 minutes until edges start to set.
  11. Preheat oven to 350°F (175°C). Transfer smoking-hot baking sheet to oven.
  12. Bake for 10-12 minutes until edges are set but centers are slightly soft.
  13. Cool cookies on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  14. Melt bittersweet chocolate chunks over indirect heat or a double boiler, allowing them to absorb some smoke.
  15. Whip heavy cream until soft peaks form, then fold in melted chocolate.
  16. Fold in sifted confectioners’ sugar and whip until stiff peaks form.
  17. Spread icing onto cooled cookies and pipe laces using a toothpick or piping bag.
  18. Let icing set for at least 1 hour before serving.

Notes

Keep the dough cold to prevent spreading. Control smoke levels to avoid bitterness; aim for thin blue smoke. Sift powdered sugar twice for smooth icing. Cookies can be made ahead and frozen un-iced for up to 3 months.
