Ingredients
- 1 cup (226g) unsalted butter
- 1 cup (125g) all-purpose flour
- ½ cup (160g) pure maple syrup
- 1 large egg
- ½ teaspoon salt
- 1 cup (100g) chopped pecans
- 1 tablespoon extra maple syrup (for topping)
- 1 teaspoon vanilla extract (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease with butter spray.
- Melt the butter in a microwave-safe bowl or small saucepan. Let it cool slightly so it is liquid but not hot.
- In a medium mixing bowl, whisk the melted butter and pure maple syrup until emulsified. Add the egg and salt, whisking vigorously until the mixture is smooth and glossy.
- Add the all-purpose flour to the wet mixture. Stir with a spatula or wooden spoon until just combined. The dough should be thick and sticky.
- Stir in the chopped pecans, reserving a small handful for the top if desired.
- Pour the batter into the prepared pan and spread evenly. Drizzle the extra tablespoon of maple syrup over the top and swirl slightly with a knife.
- Bake for 20-25 minutes, until the edges are golden brown and slightly pulling away from the pan. The center may look soft but will firm up as it cools.
- Let the blondies cool in the pan for at least 20 minutes. Lift out using the parchment overhang, transfer to a cutting board, and cut into squares.
Notes
Toast pecans in a dry skillet for 3-5 minutes for enhanced flavor. Do not overbake; blondies continue to cook in the pan after removal. Store in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months. For a gluten-free version, use a 1:1 gluten-free flour blend.
