Description

Ingredients

  • 12 oz white chocolate chips (high quality)
  • 4 tbsp unsalted butter
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup dried cranberries
  • 1 cup pecan halves
  • 1 tsp flaky sea salt

Instructions

  1. Preheat oven to 300°F (150°C). Spread Chex cereal and pecan halves evenly on a large rimmed baking sheet.
  2. Toast cereal and nuts in the oven for 10-15 minutes, stirring halfway through, until fragrant. Let cool completely.
  3. Break white chocolate into pieces. Place half the chocolate and butter in a microwave-safe bowl.
  4. Microwave on 50% power in 30-second intervals, stirring well after each interval, until mostly melted. Stir in remaining chocolate until smooth.
  5. Add cinnamon and nutmeg to the melted chocolate mixture and stir until combined.
  6. Transfer cooled cereal and pecans to a large mixing bowl. Pour warm chocolate mixture over cereal.
  7. Gently fold chocolate into cereal using a silicone spatula until evenly coated. Avoid over-stirring to prevent breaking cereal.
  8. Fold in dried cranberries, ensuring they are distributed evenly.
  9. Spread the coated mixture in a single layer on a parchment-lined baking sheet.
  10. Sprinkle flaky sea salt over the top while chocolate is still tacky.
  11. Refrigerate for 20-30 minutes until chocolate is completely firm.
  12. Break the set mix into clusters and store in an airtight container.

Notes

Ensure cereal and nuts are toasted to remove moisture and prevent sogginess. Do not rush the melting process; use low heat to prevent white chocolate from seizing. Store in an airtight container at room temperature for up to two weeks. Can be frozen for up to three months.
