  • 1 large fresh pineapple (peeled, cored, cut into 1-inch chunks) OR two 20oz cans of pineapple chunks, drained and patted dry
  • 2 tablespoons butter, melted
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg, freshly grated
  • 1 lime, cut into wedges
  • Wooden or metal skewers (wooden skewers soaked in water for 30 minutes)
  • Sea salt flakes (optional)
  • Vanilla ice cream (optional, for serving)

Instructions

  1. Preheat the grill to medium-high heat (400-450°F).
  2. If using wooden skewers, soak them in water for at least 30 minutes.
  3. Pat the pineapple chunks completely dry with paper towels to ensure proper grilling rather than steaming.
  4. Thread 3-4 pineapple chunks onto each skewer, leaving a little space between pieces.
  5. In a small bowl, whisk together the melted butter, granulated sugar, cinnamon, and nutmeg until it resembles wet sand.
  6. Place the skewers on the hot grill and brush generously with the sugar-butter mixture.
  7. Grill for 2 minutes without moving to create grill marks.
  8. Flip the skewers, brush the other side with the glaze, and grill for another 2-3 minutes until tender and caramelized.
  9. Remove from grill immediately to prevent burning.
  10. Serve warm, drizzled with fresh lime juice and topped with sea salt flakes or vanilla ice cream if desired.

Notes

Ensure pineapple chunks are patted very dry before grilling to avoid steaming. Do not over-glaze to prevent flare-ups. If using canned pineapple, drain thoroughly. Wooden skewers must be soaked to prevent burning. Serve immediately for best texture.
