  • 1 lb ground turkey (93% or 99% lean)
  • 2 medium sweet potatoes (approx. 1 lb / 450g), diced into 1/2-inch cubes
  • 1 medium yellow onion, diced
  • 1 large red bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Dice sweet potatoes, onion, and bell pepper into uniform 1/2-inch cubes. Mince garlic.
  2. Heat olive oil in a 12-inch skillet over medium-high heat. Add ground turkey, breaking it into small crumbles. Season with half the salt and pepper.
  3. Cook turkey until browned and no longer pink, about 5-7 minutes. Drain excess grease if necessary, but leave some for flavor.
  4. Push turkey to the side or remove to a plate. Add onions and bell peppers to the pan; sauté for 3 minutes until softened.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Add chili powder and cumin; stir constantly for 1 minute to toast the spices.
  7. Add diced sweet potatoes and stir to coat in the spiced oil.
  8. Pour in diced tomatoes with their juice and chicken broth. Scrape up browned bits from the bottom of the pan.
  9. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 8-10 minutes until potatoes are tender.
  10. Uncover and cook for another 2 minutes to evaporate excess liquid and crisp edges. Season with remaining salt and pepper to taste.

Notes

Do not crowd the pan when browning the turkey to ensure proper searing rather than steaming. Toasting the spices in oil before adding liquid enhances flavor. For a spicy variation, add cayenne pepper. For a creamy variation, stir in shredded cheddar or Monterey Jack cheese at the end. This dish stores well in the fridge for 3-4 days but does not freeze well due to texture changes in the sweet potatoes.
