Ingredients
- 1 lb mild Italian sausage (casings removed)
- 1 medium yellow onion, finely diced
- 4 cloves garlic, minced
- 1.5 lbs red potatoes, diced into ½-inch cubes
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 large bunches kale, stems removed and leaves chopped into ribbons
- 1 tsp fennel seeds
- Grated Parmesan cheese, for serving
- Black pepper, for serving
Instructions
- Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the Italian sausage, breaking it into small crumbles with a wooden spoon. Cook for 5-7 minutes until browned and no longer pink. Drain excess grease if necessary, leaving about a tablespoon of fat in the pot.
- Reduce heat to medium. Add the diced yellow onion and fennel seeds. Cook for 3-4 minutes until the onion is soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
- Pour in the chicken broth, scraping the bottom of the pot to release browned bits (fond). Add the diced red potatoes. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 12-15 minutes until potatoes are tender but not falling apart.
- Stir in the chopped kale and cook for 2-3 minutes until wilted and bright green. Taste and adjust seasoning with salt and pepper if needed.
- Pour in the heavy cream and stir gently. Heat through for another 2 minutes. Do not boil after adding cream to prevent curdling. Remove from heat.
- Ladle into bowls and serve immediately, topped with grated Parmesan cheese and a crack of black pepper.
Notes
For best texture, cut potatoes uniformly into ½-inch cubes. If the soup tastes heavy, add a splash of acid like white wine vinegar or lemon juice at the end. The soup thickens significantly in the fridge; add broth or water when reheating. For a vegetarian version, skip the sausage and use smoked paprika and liquid smoke for depth, or add white beans.
