  • 1 cup (200g) light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cardamom (optional)
  • 2 ounces dark rum (per serving)
  • 6 ounces hot apple cider (per serving)
  • Whipped cream (optional, for topping)
  • Cinnamon stick (for garnish)

Instructions

  1. In a medium mixing bowl, combine the softened unsalted butter, brown sugar, cinnamon, nutmeg, cloves, ginger, and cardamom.
  2. Beat the mixture on medium-high speed with an electric mixer for 2-3 minutes until light, fluffy, and well combined. Alternatively, whisk vigorously by hand until smooth and lump-free.
  3. Store the butter mixture in an airtight container in the fridge for up to a month if making ahead.
  4. Heat the apple cider in a small saucepan over medium heat or in a microwave-safe jug in 30-second intervals until hot but not boiling.
  5. Scoop 2-3 tablespoons of the butter mixture into a mug.
  6. Pour the hot cider over the butter mixture.
  7. Stir vigorously with a spoon until the butter is completely dissolved and the mixture is smooth.
  8. Stir in 2 ounces of dark rum. Adjust amount to taste preference.
  9. Top with whipped cream if desired and garnish with a cinnamon stick and a sprinkle of nutmeg.
  10. Serve immediately while hot.

Notes

Ensure butter is at room temperature to prevent a grainy mixture. Do not boil the cider as it can affect the flavor. The butter mixture can be stored in the fridge for up to a month. For a non-alcoholic version, omit the rum. For a dairy-free version, substitute butter with coconut oil and use coconut milk.
