Description
A simple, homemade elderberry syrup made with dried berries, honey, and warming spices. This natural remedy supports immune health, tastes delicious, and is easy to prepare with minimal active time.

- 1 cup (115g) dried elderberries
- 1 cup (340g) raw honey
- 2 cups (480ml) water
- 1 large cinnamon stick (5 inches / 12cm)
- 1 teaspoon whole cloves
- 1 tablespoon fresh ginger root, sliced
- 1 star anise pod (optional)
Instructions
- In a medium saucepan, combine dried elderberries, water, cinnamon stick, cloves, ginger, and star anise (if using).
- Bring the mixture to a rolling boil over medium-high heat, then reduce heat to low.
- Simmer gently for 45 minutes to 1 hour until the liquid turns a deep purple color.
- Remove from heat and let cool for 10-15 minutes until warm to the touch (do not add honey to boiling liquid).
- Strain the mixture through a fine-mesh strainer or nut milk bag into a bowl, pressing solids to extract all liquid.
- Stir in the raw honey until completely dissolved.
- Pour into a sterilized glass jar and let cool to room temperature before refrigerating.
Notes
Do not use fresh elderberries unless properly processed, as they contain cyanogenic glycosides. Always add honey after the mixture has cooled slightly to preserve beneficial enzymes. Store in the refrigerator for up to 6 months or freeze for up to 12 months. Ensure all equipment is sterilized to prevent mold.
