Ingredients

  • 32 oz (950 ml) Apple Cider Vinegar (unfiltered with ‘mother’)
  • 1 cup (100 g) Fresh Ginger Root, sliced
  • 1/2 cup (50 g) Fresh Turmeric Root, sliced
  • 1/2 cup (75 g) Garlic Cloves, peeled and crushed
  • 1/4 cup (30 g) Fresh Horseradish Root, grated
  • 23 small Hot Peppers (e.g., Thai bird’s eye or cayenne), chopped
  • 1 tbsp each of Dried Oregano, Echinacea, and Thyme
  • 24 tbsp Raw Honey (added after straining)

Instructions

  1. Scrub ginger, turmeric, and horseradish under cold water. Slice ginger and turmeric into thin coins, grate horseradish, chop hot peppers, and lightly crush garlic cloves.
  2. Tightly pack all chopped roots, garlic, peppers, and dried herbs into a clean 1-quart mason jar, ensuring no large air pockets remain.
  3. Pour apple cider vinegar over the ingredients until completely submerged. Leave about an inch of headspace, seal the lid tightly, and label with the date.
  4. Store the jar in a cool, dark place for 4 weeks. Shake gently every few days to distribute flavors.
  5. After 4 weeks, strain the liquid through a nut milk bag or cheesecloth into a bowl, squeezing to extract all liquid. Discard solids.
  6. Stir in raw honey to taste (start with 2 tablespoons).
  7. Pour the finished tonic into small glass bottles using a funnel and store in the refrigerator.

Notes

Wear gloves when handling hot peppers to avoid skin irritation. Do not use metal containers for storage as vinegar reacts with metal. The tonic can last 6 months to a year in the fridge. Adjust heat levels by varying the amount of peppers and horseradish.
