Instructions
- Peel and dice apples into ½-inch chunks. Toss with butter, cinnamon, and sweetener until coated.
- Cook apples in a saucepan over medium heat for 3-5 minutes until tender but not mushy. Alternatively, microwave in a covered bowl for 2-3 minutes, stirring halfway.
- Divide warm apple mixture evenly among small microwave-safe bowls or ramekins.
- In a separate bowl or food processor, blend softened cream cheese, cottage cheese, vanilla extract, and heavy cream (if using) until completely smooth.
- Spread the creamy topping over the warm apples in each bowl.
- Chill in the refrigerator for 15-20 minutes to allow flavors to meld and topping to set.
- Serve with optional toppings like crushed nuts or extra cinnamon.
