Ingredients
- 1.5 pounds steak (sirloin or ribeye), cut into 1-inch cubes
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 2 tablespoons avocado oil or olive oil
- 4 tablespoons unsalted butter
- 6–8 cloves garlic, minced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Worcestershire sauce or soy sauce
Instructions
- Pat the steak cubes completely dry with paper towels and cut into 1-inch uniform pieces.
- In a small bowl, toss the steak with salt, pepper, garlic powder, and onion powder.
- Heat a 12-inch cast iron skillet over medium-high heat and add the avocado oil. Wait until the oil shimmers and just starts to smoke.
- Add the steak cubes to the pan in a single layer, ensuring not to overcrowd the pan. Cook in batches if necessary.
- Sear the steak undisturbed for 1-2 minutes to develop a crust, then flip and cook for another 1-2 minutes until browned but tender inside (about 4 minutes total for medium-rare).
- Remove the steak to a plate.
- Reduce heat to medium-low. Add butter to the same skillet. Once melted, add minced garlic and red pepper flakes. Stir constantly for about 1 minute until fragrant and golden.
- Return the steak and any accumulated juices to the pan. Pour in Worcestershire sauce.
- Toss everything together to coat the steak in the garlic butter sauce. Simmer for 30 seconds to meld flavors.
- Taste and adjust salt if needed. Sprinkle with fresh chopped parsley and serve immediately.

Do not crowd the pan to ensure proper searing; moisture is the enemy of browning. Use high smoke point oil like avocado oil. Watch the garlic closely as it burns quickly. Let the steak rest for 2 minutes after cooking. Best enjoyed fresh; freezing is not recommended as the texture may change and the butter sauce may separate.
