Ingredients

  • 1 cup (150g) frozen strawberries
  • 1/2 cup (120g) vanilla yogurt (or plain Greek yogurt with vanilla extract)
  • 1/2 cup (120ml) strawberry juice or water
  • 1 teaspoon lime juice
  • 12 teaspoons honey or maple syrup (optional)
  • 1/2 cup (120ml) full-fat canned coconut milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon coconut cream (optional)
  • Ice cubes (optional, if strawberries aren’t frozen enough)

Instructions

  1. Prep ingredients: Break apart frozen strawberries and measure out yogurt, lime juice, honey, and coconut milk.
  2. Blend the pink layer: Combine frozen strawberries, vanilla yogurt, strawberry juice (or water), lime juice, and honey in a blender. Blend on high until completely smooth and thick.
  3. Prepare the coconut layer: In a separate bowl, whisk together canned coconut milk, vanilla extract, and coconut cream (if using) until smooth and creamy.
  4. Assemble the drink: Pour the pink strawberry mixture into a tall glass or mason jar, filling it about 3/4 full.
  5. Layer the coconut: Hold a spoon upside down just above the surface of the pink layer. Slowly pour the coconut mixture over the back of the spoon to create a distinct white layer on top.
  6. Garnish and serve: Garnish with fresh strawberry slices or mint. Serve immediately with a straw.

Notes

Use frozen strawberries for a thick, slushie-like consistency. Ensure the pink layer is very cold and thick to prevent the layers from mixing. Pour the coconut layer slowly over the back of a spoon. The pink layer can be stored in the fridge for up to 2 days, but the coconut layer should be made fresh.
