Description
A freezer-friendly, high-protein breakfast casserole that combines the flavors of traditional blintzes with the convenience of meal prep. It features a creamy cottage cheese and cream cheese filling wrapped in a tender crepe-like batter, designed to be made once and eaten throughout the week.
Ingredients
- 4 large eggs
- 1 cup all-purpose flour
- 1 cup whole milk
- 1 cup full-fat cottage cheese
- 8 oz cream cheese, softened and cubed
- 3 tbsp granulated sugar
- 1 tsp vanilla extract
- 2 tbsp butter, melted
- 1/2 tsp salt
- 1 extra egg yolk (optional, for richness)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish generously with butter or non-stick spray.
- In a high-speed blender, combine eggs, milk, melted butter, flour, sugar, salt, and vanilla. Blend on high for 30 seconds until smooth. Let batter rest for 5 minutes.
- In a medium bowl, combine softened cream cheese, blended cottage cheese, and optional egg yolk. Mix until smooth and creamy.
- Pour half of the thin batter into the prepared baking dish and spread evenly. Dollop the cheese mixture over the batter and swirl slightly with a knife. Pour remaining batter on top and spread.
- Bake for 35-40 minutes until the top is golden brown and the center is set (slight jiggle is okay).
- Let cool in the pan for 10 minutes before cutting into 4 equal squares.
Notes
Blend cottage cheese until completely smooth to avoid grittiness. Let batter rest to hydrate flour. For freezing, wrap individual portions tightly in plastic wrap and store in freezer bags for up to 3 months. Reheat with a splash of milk to maintain moisture.
