Description

A strategic meal prep side dish featuring thin-sliced delicata squash roasted until crisp and glazed with a sweet and spicy hot honey mixture. This forgiving recipe holds up well in the fridge for up to five days and freezes perfectly.


Ingredients

  • 2 medium delicata squash (approx. 2 lbs / 900g)
  • 3 tbsp hot honey
  • 2 tbsp extra virgin olive oil
  • 1 tbsp maple syrup
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh thyme (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line two half-sheet pans with parchment paper.
  2. Wash the squash thoroughly. Cut off the stem end and slice the squash in half lengthwise.
  3. Scoop out the seeds and stringy pulp from the center with a spoon.
  4. Slice each half into 1/4-inch thick half-moons.
  5. Place squash slices in a large bowl. Drizzle with olive oil and sprinkle with sea salt, black pepper, smoked paprika, and thyme (if using).
  6. Toss with hands until every slice is lightly coated with a sheen of oil.
  7. Spread squash in a single layer on the prepared sheet pans, ensuring slices do not overlap.
  8. Roast for 25-30 minutes, flipping slices halfway through at the 15-minute mark.
  9. Remove from oven when edges are caramelized and golden, and a fork pierces through easily.
  10. While squash is still hot, drizzle with hot honey and maple syrup. Toss gently to coat.
  11. Let squash cool on the pans for 10 minutes to stop cooking and set the glaze.
  12. Portion into 4-5 glass containers, seal tightly, and store in fridge or freezer.

Notes

Do not skip the cooling step; putting hot squash into containers creates condensation which leads to soggy results. If you cannot find hot honey, mix 2 tablespoons of regular honey with 1/2 teaspoon of cayenne pepper. For freezing, place containers on a flat surface in the freezer for 2 hours before stacking to prevent lids from sticking. When reheating, add a teaspoon of water to revive the texture.
