A sophisticated, non-alcoholic fall drink that captures the essence of autumn with spiced apple cider and real maple syrup. It is easy to make, customizable for hot or cold serving, and naturally gluten-free and vegan.


Ingredients

  • 6 cups (1.4 liters) fresh, unfiltered apple cider
  • 34 tablespoons (45-60ml) 100% pure maple syrup
  • 23 cinnamon sticks
  • 68 whole cloves
  • 1 star anise pod (optional)
  • 2 apples (Honeycrisp or Gala), sliced thin for garnish
  • 1 cinnamon stick per glass for stirring
  • Ice cubes (for cold serving)
  • Optional: Fresh thyme sprigs, ginger beer, or vanilla extract

Instructions

  1. Slice apples for garnish and gather all spices.
  2. Pour apple cider into a large saucepan or pot.
  3. Add cinnamon sticks, cloves, and star anise (if using) to the cider.
  4. Heat the cider over medium-low heat until small bubbles form around the edges. Do not boil.
  5. Reduce heat to low and simmer for 10-15 minutes to infuse spices. Stir occasionally.
  6. Remove pot from heat and stir in maple syrup. Taste and adjust sweetness if needed.
  7. For hot version: Remove spices with tongs, pour into mugs, garnish with apple slice and cinnamon stick, and serve immediately.
  8. For cold version: Let cider cool to room temperature, remove spices, strain if necessary, and refrigerate for at least 2 hours. Serve over ice with garnish.

Notes

Do not boil the cider as it can make the flavor taste cooked. Use real maple syrup for best flavor. The drink can be made ahead and stored in the fridge for up to 5 days. It does not freeze well. Adjust sweetness based on the tartness of the cider used.
