Ingredients

  • 2 cups unsweetened milk (oat milk recommended)
  • 23 tablespoons real maple syrup (Grade B or Dark)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger (optional)
  • Pinch of sea salt
  • Whipped cream (optional, for topping)
  • Cinnamon stick (optional, for garnish)
  • Nutmeg (optional, freshly grated)

Instructions

  1. In a small saucepan, pour in the milk and add the maple syrup, cinnamon, ginger, and pinch of salt. Whisk together while the milk is still cold to prevent clumping.
  2. Place the saucepan over medium-low heat. Warm the milk slowly, stirring occasionally, until small bubbles form around the edges and the temperature reaches about 160°F (70°C). Do not boil.
  3. Remove from heat and froth the milk using a handheld frother, whisk, or fork until creamy foam forms.
  4. Pour the frothed milk into a mug. Top with whipped cream, a sprinkle of cinnamon, and a cinnamon stick if desired. Serve immediately.

Notes

Do not boil the milk as it can scorch or separate. Use real maple syrup, not pancake syrup, for the best flavor. For deeper flavor, toast the spices in the dry saucepan for 30 seconds before adding milk. Leftovers can be stored in the fridge for up to 3 days but do not freeze well.
