Description

These baked, freezer-friendly doughnut bites are the perfect make-ahead breakfast. They hold up well in the fridge or freezer, reheat quickly in the microwave, and offer a customizable, portion-controlled treat for busy mornings.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • Pinch of salt
  • ¼ cup granulated sugar
  • ½ cup buttermilk
  • 1 large egg, room temperature
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 tbsp granulated sugar (for coating)
  • 1 tsp cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin pan generously with non-stick spray or melted butter.
  2. In a medium bowl, whisk together the flour, baking powder, and a pinch of salt.
  3. In a separate bowl, whisk the egg, melted butter, buttermilk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Fold together with a spatula until the flour just disappears. Do not overmix; the batter should be thick and slightly lumpy.
  5. Transfer batter to a piping bag or Ziploc bag with the corner cut off. Fill mini muffin cups about ¾ full.
  6. Bake for 8-10 minutes (or 12-14 minutes for regular muffin tins) until tops are golden brown and a toothpick comes out clean.
  7. Let cool in the pan for 2 minutes, then transfer to a wire rack to cool completely.
  8. Once completely cool, toss each doughnut bite in a mixture of sugar and cinnamon until coated.
  9. Store in an airtight container at room temperature for 2 days, in the fridge for 5 days, or freeze for up to 3 months.

Notes

Do not overmix the batter to avoid tough doughnuts. Ensure doughnuts are completely cool before coating to prevent the sugar from melting. For freezing, lay bites in a single layer on a baking sheet for 1 hour before bagging to prevent sticking. If using a regular muffin tin, fill only halfway and bake for 12-14 minutes.
