Description
A rich, chewy, and cheesy gluten-free spaetzle made with almond flour and tapioca starch, pan-fried until golden and tossed with sharp cheddar and caramelized onions for a comforting Bavarian-inspired meal.
Ingredients
- 1 ½ cups super-fine almond flour
- ½ cup tapioca starch
- 3 large eggs, room temperature
- 1 cup sharp cheddar cheese, freshly grated
- 3 tbsp unsalted butter (divided)
- 2 medium yellow onions, thinly sliced
- 2 tbsp nutritional yeast
- 1 tsp salt
- ½ tsp white pepper
Instructions
- Heat 1 tablespoon of butter in a large skillet over medium-low heat. Add sliced onions and a pinch of salt, cooking slowly until deep golden brown and jammy (about 15 minutes). Set aside.
- In a large bowl, whisk eggs until frothy. Add almond flour, tapioca starch, nutritional yeast, salt, and white pepper. Whisk vigorously for 60 seconds until smooth and thick. Let batter rest for 5 minutes.
- Heat remaining 2 tablespoons of butter in a large skillet over medium heat. Once foaming, drop spoonfuls of batter into the pan, flattening slightly. Cook for 2-3 minutes until golden and crispy on one side.
- Flip spaetzle and cook for another 1-2 minutes until cooked through but soft inside. Transfer to a large serving bowl.
- Sprinkle grated cheddar cheese over hot spaetzle and toss gently to melt. Cover with a lid for 30 seconds if needed to ensure melting.
- Stir in half of the caramelized onions. Taste and adjust seasoning. Top with remaining onions and serve immediately.
Notes
Use super-fine almond flour, not almond meal with skins, to avoid grittiness. Ensure eggs are room temperature for a smoother batter. Do not overmix the dry ingredients to prevent a gummy texture. If the batter is too wet, add more tapioca starch. For a dairy-free version, use vegan butter and vegan cheese shreds.
