  • 1 ½ cups super-fine almond flour
  • ½ cup tapioca starch
  • 3 large eggs, room temperature
  • 1 cup sharp cheddar cheese, freshly grated
  • 3 tbsp unsalted butter (divided)
  • 2 medium yellow onions, thinly sliced
  • 2 tbsp nutritional yeast
  • 1 tsp salt
  • ½ tsp white pepper

Instructions

  1. Heat 1 tablespoon of butter in a large skillet over medium-low heat. Add sliced onions and a pinch of salt, cooking slowly until deep golden brown and jammy (about 15 minutes). Set aside.
  2. In a large bowl, whisk eggs until frothy. Add almond flour, tapioca starch, nutritional yeast, salt, and white pepper. Whisk vigorously for 60 seconds until smooth and thick. Let batter rest for 5 minutes.
  3. Heat remaining 2 tablespoons of butter in a large skillet over medium heat. Once foaming, drop spoonfuls of batter into the pan, flattening slightly. Cook for 2-3 minutes until golden and crispy on one side.
  4. Flip spaetzle and cook for another 1-2 minutes until cooked through but soft inside. Transfer to a large serving bowl.
  5. Sprinkle grated cheddar cheese over hot spaetzle and toss gently to melt. Cover with a lid for 30 seconds if needed to ensure melting.
  6. Stir in half of the caramelized onions. Taste and adjust seasoning. Top with remaining onions and serve immediately.

Notes

Use super-fine almond flour, not almond meal with skins, to avoid grittiness. Ensure eggs are room temperature for a smoother batter. Do not overmix the dry ingredients to prevent a gummy texture. If the batter is too wet, add more tapioca starch. For a dairy-free version, use vegan butter and vegan cheese shreds.
