Ingredients

  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1 large egg, room temperature
  • 2 tablespoons whole milk
  • 1 large or 2 small apples (approx. 300g), peeled and diced into 1/2-inch cubes
  • 1 tablespoon butter (for greasing skillet)

Instructions

  1. Preheat oven to 350°F (175°C). Place 1 tablespoon of butter in a 6-inch skillet and put it in the oven to melt and coat the pan while preheating.
  2. In a medium mixing bowl, whisk together the flour, sugar, baking powder, and cinnamon.
  3. Add the melted butter, egg, and milk to the dry ingredients. Whisk vigorously for 30-45 seconds until the batter is thick but pourable. Do not overmix.
  4. Carefully remove the hot skillet from the oven. Pour the batter into the skillet.
  5. Arrange the diced apples on top of the batter. Sprinkle with extra cinnamon if desired.
  6. Return the skillet to the oven and bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  7. Remove from oven and let cool for 5 minutes before serving warm.

Notes

For best results, use apples that hold their shape like Honeycrisp or Fuji. Ensure the egg is at room temperature to prevent the butter from seizing. The skillet should be preheated with butter to ensure a crispy bottom. If the top browns too quickly, tent with foil for the last 5 minutes.
