Ingredients

  • 1.5 lbs Italian Sausage (mix of mild and hot, raw links)
  • 3 large Bell Peppers (red and yellow, cut into 1-inch chunks)
  • 1 large Yellow Onion (cut into wedges or large chunks)
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Dried Oregano
  • 4 cloves Garlic (minced)
  • 1/2 teaspoon Red Pepper Flakes (optional)
  • 1/4 cup Fresh Basil (chopped)
  • Kosher Salt and Black Pepper to taste
  • 1 tablespoon Red Wine Vinegar or Balsamic Glaze

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. Chop peppers and onions into uniform 1-inch pieces. Place in a large mixing bowl.
  3. Drizzle with olive oil and sprinkle with oregano, salt, pepper, and red pepper flakes. Toss until vegetables are well coated.
  4. Spread vegetables in a single layer on the baking sheet. Roast for 15 minutes.
  5. Remove pan from oven. Prick sausages with a fork and place them on top of the vegetables. Return to oven and roast for 10-12 minutes until sausages reach 160°F (71°C) and vegetables are tender.
  6. Remove pan from oven. Sprinkle minced garlic over the mixture. Return to oven for 2 minutes until garlic is fragrant.
  7. Remove from oven and let rest for 2-3 minutes. Sprinkle with fresh basil and drizzle with red wine vinegar or balsamic glaze.
  8. Slice sausages into rounds if desired and serve immediately.

Notes

Do not crowd the pan to ensure vegetables roast rather than steam. Add garlic in the last few minutes to prevent burning. For a cheesy variation, sprinkle mozzarella or provolone in the last 2 minutes of roasting. This dish does not freeze well; store leftovers in the refrigerator for up to 4 days.
