A no-cook, easy-to-assemble summer dessert featuring layers of fresh strawberries, creamy Greek yogurt, and crunchy granola. Perfect for hot days when you want something sweet without turning on the oven.

- 1 pint (450g) fresh strawberries
- 1 tablespoon lemon juice
- 1–2 tablespoons granulated sugar (or honey/maple syrup)
- 2 cups (450g) plain full-fat Greek yogurt
- 1 teaspoon vanilla extract
- 1 tablespoon honey (optional)
- 1 cup (100g) granola
- Fresh mint leaves (optional garnish)
- Chia seeds (optional)
- Basil leaves (optional)
Instructions
- Wash strawberries, pat dry, and remove green tops.
- Hull about half the strawberries and mash them in a small bowl using a fork.
- Add lemon juice and sugar to the mashed berries, stir well, and let sit for 10-15 minutes to macerate.
- In a separate bowl, mix Greek yogurt with vanilla extract and honey until combined.
- To assemble, start with a layer of yogurt at the bottom of a clear glass.
- Add a layer of the strawberry mixture (including juices).
- Add a layer of granola.
- Repeat layers: yogurt, strawberries, granola.
- Finish with a final dollop of yogurt on top.
- Garnish with fresh berries, mint, or a drizzle of honey and serve immediately.
Notes
For best texture, add granola just before serving to prevent sogginess. If using runny yogurt, strain it in a cheesecloth for 30 minutes. You can prep the yogurt and berry components up to 3 days in advance, but assemble shortly before eating. Do not freeze assembled parfaits.
