A no-cook, easy-to-assemble summer dessert featuring layers of fresh strawberries, creamy Greek yogurt, and crunchy granola. Perfect for hot days when you want something sweet without turning on the oven.


Ingredients

  • 1 pint (450g) fresh strawberries
  • 1 tablespoon lemon juice
  • 12 tablespoons granulated sugar (or honey/maple syrup)
  • 2 cups (450g) plain full-fat Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey (optional)
  • 1 cup (100g) granola
  • Fresh mint leaves (optional garnish)
  • Chia seeds (optional)
  • Basil leaves (optional)

Instructions

  1. Wash strawberries, pat dry, and remove green tops.
  2. Hull about half the strawberries and mash them in a small bowl using a fork.
  3. Add lemon juice and sugar to the mashed berries, stir well, and let sit for 10-15 minutes to macerate.
  4. In a separate bowl, mix Greek yogurt with vanilla extract and honey until combined.
  5. To assemble, start with a layer of yogurt at the bottom of a clear glass.
  6. Add a layer of the strawberry mixture (including juices).
  7. Add a layer of granola.
  8. Repeat layers: yogurt, strawberries, granola.
  9. Finish with a final dollop of yogurt on top.
  10. Garnish with fresh berries, mint, or a drizzle of honey and serve immediately.

Notes

For best texture, add granola just before serving to prevent sogginess. If using runny yogurt, strain it in a cheesecloth for 30 minutes. You can prep the yogurt and berry components up to 3 days in advance, but assemble shortly before eating. Do not freeze assembled parfaits.
