Instructions

  1. Preheat oven to 350°F (175°C) and line a 6-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a larger bowl, beat the softened butter and granulated sugar on medium-high speed for 3-4 minutes until light and fluffy.
  4. Beat in the egg, 2 teaspoons lemon zest, lemon juice, and ½ teaspoon vanilla extract until just combined.
  5. Add the dry ingredients to the wet ingredients in two additions, alternating with the milk. Mix on low speed until just combined; do not overmix.
  6. Divide the batter evenly among the 6 cupcake liners, filling them about 2/3 full.
