A beginner-friendly, comforting dinner made with instant ramen, a savory spicy broth, and perfectly jammy eggs. Ready in under 20 minutes with minimal cleanup.

- 2 large eggs
- 2 packets instant ramen noodles (approx. 200g), flavor packets discarded
- 2 cups water
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated or minced
- 3 tbsp soy sauce
- 2 tbsp chili oil or chili crisp
- 1 tsp rice vinegar
- 2 stalks green onions, thinly sliced
Instructions
- Fill a medium saucepan with enough water to cover the eggs by an inch and bring to a rolling boil.
- Gently lower cold eggs into the boiling water using a slotted spoon.
- Boil eggs for exactly 6.5 minutes.
- Immediately transfer eggs to a bowl of ice water to stop cooking. Once cool, peel under running water.
- In the same pot (or a clean one), bring 2 cups of water to a simmer.
- Add minced garlic and grated ginger; simmer for 1 minute until fragrant.
- Stir in soy sauce, chili oil, and rice vinegar to create the broth base. Keep on low heat.
- Add ramen noodles to the simmering broth and cook for 3-4 minutes according to package instructions, stirring occasionally.
- Lift noodles out with chopsticks or a fork and place them in serving bowls.
- Ladle hot broth over the noodles.
- Slice peeled jammy eggs in half and place on top of the noodles.
- Sprinkle with sliced green onions and serve immediately.
Notes
For the best jammy eggs, use large eggs and stick to the 6.5-minute boil time. Do not drain the noodles; cook them directly in the seasoned broth to absorb flavor. The recipe does not store well as noodles become mushy; store broth and noodles separately if necessary. For a gluten-free version, use gluten-free ramen and tamari instead of soy sauce.
